Pistachio Fruit Crumble

One of my favourite dessert of the moment, fruit crumbles are great as you can really create your own with the fruits you have on the day. Being winter here, I like to use apples, pears a little banana and blueberries that I froze at the end of the summer, YUM!

You can make a family size crumble or individual ones in small ramekins which is nice for portion control!

Ingredients

Fruits: whatever you like! For family size, I use about 3 medium apples, 3 medium pears, 1 small banana and 1/4 cup frozen blueberries

Crumble:

  • 50 grs butter
  • 1/4 cup flour
  • 1/4 cup sugar
  • 1/4 cup shredded coconut
  • 1/4 cup nuts (grind pistachios and almonds)

Method

Preheat oven at 180 degrees

Peal, core and cut the fruits you need to fill the baking dish of your choice (large or ramekins). You can sprinkle some ground cinnamon on top of the fruits if you like the taste

In a bowl, mix the flour, sugar and coconut together

Using a small mixer, grind the pistachios and almonds together just enough to keep some crunchy bits

Keep aside a small amount of the grind nuts to sprinkle on top of the baked crumble for extra crunch. Add the rest of the nuts to the flour mixture

Cut the butter in small cubes and incorporate to the flour and nut mixture. Using your fingers, work the butter until the mixture becomes crumbly

Sprinkle the crumble on top of the fruits and bake for about 30mns or until the fruits are soft

Once cooked, sprinkle the remaining of the nuts on the crumble.

Serve warm or cold on its own or with vanilla ice-cream.

Ingredients for 2 adults

  • 4 mushrooms
  • a handful of steamed spinach (you can use 2 cubes of frozen spinach instead – in that case, thaw in the microwave before adding to the pan)
  • a handful of steamed green beans (flat beans)
  • 1 tsp crushed garlic (fresh or frozen)
  • olive oil
  • 1/2 to 1 tsp butter
  • salt and pepper

Method

Steam a good handful of green beans and a bunch of spinach - you can use only the amount you want and keep the rest for another dish. The green beans will take about 15-20mns to cook so start with them. The spinach will only take about 10mns.

Wash and slice the mushrooms

In a small frying pan, drizzle about 1 tsp of olive oil and start cooking the mushrooms over medium heat

Add the cooked green beans, garlic and butter. Cook for about 2-3mns until the butter starts frying the beans and mushrooms

Add the spinach, salt and pepper and stir for just 1 minute.

It’s ready to serve. Easy and delicious!
